The highlands above Verchiano and Volperino are areas of high agricultural vocation, a typical activity for all the valley areas in the Foligno mountains, and especially the large plains of ​​Colfiorito. By observing the landscape, one may easily notice the square patches of cultivated fields, with their ever-changing seasonal colors. Legumes are mostly grown in the highlands of the Foligno mountains: lentils, which have always been known and appreciated, the local variety of “cicerchie”, beans and chickpeas. There are also numerous cereal crops such as wheat, barley and especially spelt. A much-appreciated typical product of the Colfiorito plain is the "Red Potato of Colfiorito", which has also been recognized as a European IGP (Protected Geographical Indication) farm product. The territory of the highlands is also rich in pastures for livestock, with a consequent production of excellent meats, milk and dairy products, completing the panorama of a rich and varied agri-food offer.
